RECIPE: PEANUT BUTTER COOKIE SANDWICHES

Hi there!

It's been way too long since I posted a recipe, so I thought that this week I would share my formula for the perfectly gooey peanut butter cookies.

The phenomenon peanut butter cookies is relatively new to me, but I've always loved peanut butter and these cookies are a recent obsession of mine. They're super easy to make and there are so many different variations possible.




What you will need - this makes around 24-30 cookies:
- 110 grams of peanut butter
- 110 grams of butter, at room temperature
- 90 grams of granulated sugar
- 100 grams of light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 100 grams of all purpose flour
- 90 grams of self raising flour
- 1 tsp baking powder



Step 1:
Pre-heat your oven to 190 degrees Celsius (375 degrees Fahrenheit).

Step 2:
In a large bowl, mix the peanut butter with the butter, add both sugars and mix until light and fluffy.

Step 3:
Add the egg and the vanilla extract, mix again until the egg is thoroughly mixed in.

Step 4:
In another bowl, combine the remaining ingredients - flours, baking powder -, add a pinch of seasalt and stir. Add in three parts to the wet ingredients, mix thoroughly.



Step 5:
Put the cookie dough in the fridge for at least an hour, then prepare a baking sheet with parchment paper or grease proof paper - is there even a difference?

Step 6:
Take tablespoon-sized portions of dough, make them into little balls, roll them through some granulated sugar and put them on your baking sheet. Make sure they have plenty of room because they get quite big.

Step 7:
Bake them for about 9-11 minutes. They'll be very mushy when you take them out, but they'll harden once they cool off.



Now this post isn't called 'Peanut Butter Cookie SANDWICHES' for nothing, because the only thing that can make these cookies better is doubling the amount you eat and putting something delicious inbetween. A few examples:
- Nutella and frozen raspberries (my personal fave)
- Ben & Jerry's Chocolate Fudge
- Jam (for the PB&J kinda feeling)
- Banana and basil
- Cucumber
